GRILLED GULF OF MAINE SALMON WITH ORANGE AND FENNEL

Ingredients
- 2 lbs. Filet of Salmon
- 2 tbsp. + 2 oz. Extra Virgin Olive Oils
- 4 oz. Arugula
- 1 Fennel bulb, fronds removed, shaved or sliced thin.
- 1 medium Red Onion, shaved or sliced thin
- 2 Navel Oranges, juiced
- Salt & Pepper, to taste
Directions
- Season salmon with the olive oil, salt and pepper, grill on medium heat for about 4 to 6 minutes per side.
- Mix the arugula, fennel and red onion; mix the orange juice, olive oil, salt and pepper in a bowl, serve with the salmon.
