Ingredients

  • 2 lbs. Filet of Salmon
  • 2 tbsp. + 2 oz. Extra Virgin Olive Oils
  • 4 oz. Arugula
  • 1 Fennel bulb, fronds removed, shaved or sliced thin.
  • 1 medium Red Onion, shaved or sliced thin
  • 2 Navel Oranges, juiced
  • Salt & Pepper, to taste

Directions

  1. Season salmon with the olive oil, salt and pepper, grill on medium heat for about 4 to 6 minutes per side.
  2. Mix the arugula, fennel and red onion; mix the orange juice, olive oil, salt and pepper in a bowl, serve with the salmon.
